Church Road Tom Syrah 2015
Fruit sourced from our Redstone Vineyard on the Bridge Pa Triangle (82.5%) and Gimblett Vineyard (17.5%). Selective harvesting was employed to target only the lowest vigour soils, down to part rows where required. The fruit was then destemmed, lightly crushed, and fermented warm in a shallow profile, 70 year old concrete fermenters and an old French oak cuve. The caps were regularly broken and wetted to ensure a steady, gentle extraction. The resultant wine was filled to a selection of the finest French oak barrels (42% new) for 22 months subsequent maturation. The final wine has been very lightly egg white fined to soften the palate, and then bottled unfiltered.
